Roasted Lemon Cauliflower

Roasted Lemon Cauliflower with Crushed Red Pepper and Garlic by Completely Golden Tess Palma-Martinez.jpg

One of my favorite dishes, and SO simple to make. It’s the right amount of sweet, savory and spicy with limited prep and a lot of WOW. The magic of this dish comes from the caramelization that happens with the lemon juice and garlic!

Ingredients- Serves 4
- 1 Head Organic Cauliflower
- 2 Organic Lemons- quartered into wedges
- 1/2 Head of Organic Garlic- crushed
- 4-5 tbsp Olive Oil
- 1-2 tbsp Crushed Red Pepper
- Salt + Pepper to taste

- Heat oven to 425*F and line one baking sheet with parchment paper
- Remove leaves and stem from cauliflower, wash as needed
- Cut the cauliflower into large “steaks.” Use a large knife and cut the head vertically into 1 inch strips.
- Place cauliflower steaks and pieces onto the baking sheet and drizzle with olive oil
- Squeeze juice of both lemons to cover cauliflower, placing the lemon rinds in and about the cauliflower
- Add crushed cloves of garlic by tucking pieces into the cauliflower
- Sprinkle crushed red pepper evenly and add salt and pepper to taste
- Bake for 30 minutes, turning cauliflower over half-way, or until golden brown
- Enjoy!
