Raw Brussel Sprout Slaw Salad

This raw brussel sprout slaw salad is the perfect potluck dish. I first made it in a rush on my way to a summer lunch date with my friends.

It’s the perfect combination of savory, sweet, bitter and sour, mixed in delicious healthy fat!

Ingredients- serves 4

3 cups Brussel Sprouts

Juice of 1 Lemon

½ cup Mayonnaise

¼ cup Raw Pecans

2 Dates

Salt and pepper to taste

Directions

  • Remove bottoms and outer leaves of the brussel sprouts

  • Chop brussel sprouts vertically, from bottom to top, in thin strips

  • Add lemon juice, mayonnaise, and salt and pepper- toss to evenly coat

  • Cube dates, removing pits, and roughly chop pecans, adding both to the dish

  • Give a final light toss, and you’re ready to go!
